Turmeric and Lentil Soup for Diabetes 

Ingredients:  1 cup dried red lentils, rinsed 1 onion, chopped 3 carrots, diced 2 celery stalks, chopped

3 cloves garlic, minced 1 teaspoon ground turmeric 1 teaspoon ground cumin

6 cups vegetable broth (low-sodium) 1 can (14 oz) diced tomatoes (low-sodium) 1 tablespoon olive oil Salt and pepper to taste Fresh cilantro for garnish

Instructions:  Sauté onions, carrots, celery, and garlic in olive oil until softened.

Add lentils, turmeric, cumin, vegetable broth, and diced tomatoes. Bring to a boil, then reduce heat and simmer until lentils are cooked.

Season with salt and pepper to taste. Garnish with fresh cilantro before serving.

The anti-inflammatory properties of turmeric combined with the fiber and protein from lentils contribute to better blood sugar control and may help reduce inflammation in the body.
