Low-Carb Cauliflower Fried Rice for Diabetes

Diabetes-Friendly Low-Carb Cauliflower Fried Rice. A diabetes-friendly version of fried rice using cauliflower instead of rice.

Ingredients: Cauliflower - 1 cup, riced Mixed Veggies - ¼ cup Soy Sauce - 1 tsp Garlic - 2 cloves, minced

Step 1 - Sauté Veggies & Cauliflower Sauté veggies, add cauliflower rice, and cook until tender.

Step 2 - Add Soy Sauce. Add soy sauce, mix well, and serve warm.

This healthier version of fried rice has all the fiber that a diabetic food needs. The added benefit is you can have it in excess amounts since its low on calories.
