Lemon and Herb Chicken Soup for Diabetes

Ingredients: 1 lb boneless, skinless chicken thighs, diced 1 onion, finely chopped 2 carrots, peeled and sliced

2 celery stalks, chopped 3 cloves garlic, minced Zest and juice of 1 lemon

8 cups low-sodium chicken broth 1 teaspoon dried thyme 1 teaspoon dried dill

Salt and pepper to taste 2 tablespoons olive oil Fresh dill for garnish (optional)

Instructions: In a large pot, heat olive oil over medium heat. Add onions, carrots, celery, and garlic. Sauté until vegetables are softened.

Add diced chicken and cook until browned.  Stir in chicken broth, lemon zest, lemon juice, thyme, dill, salt, and pepper.

Bring the soup to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes or until chicken is cooked through.

Lemon and Herb Chicken Soup

Adjust seasoning to taste. Garnish with fresh dill if desired and serve hot.
