Healthy Navratri Special: Samvat Rice Pulao for Diabetics

Ingredients: Gather 1 cup of washed and soaked samvat rice (barnyard millet), assorted chopped vegetables (carrots, peas, beans), cumin seeds, slit green chili, ghee, and rock salt (sendha namak).

Heat Ghee: In a pressure cooker, heat a tablespoon of ghee.

Sauté Spices: Add cumin seeds and slit green chili to the hot ghee, sautéing for a few seconds until fragrant.

Cook Vegetables: Add the chopped vegetables and cook for about a minute, stirring occasionally.

Add Rice: Drain the soaked samvat rice and add it to the cooker, stirring well to combine with the vegetables.

Season and Cook: Pour in 1.5 cups of water, season with rock salt, and pressure cook for 2 whistles.

Fluff and Serve: Once done, gently fluff the pulao with a fork and serve hot. Enjoy your nutritious meal!
