Diabetes-Friendly Palak (Spinach) Soup

Palak Soup for Diabetics  This warm, nourishing creamy soup uses spinach, making it a low-calorie, low-carb choice perfect for diabetics.

Ingredients:  Fresh Spinach Leaves - 2 cups Onion - 1 small, chopped Garlic - 2 cloves, minced

Grated Ginger - 1 tsp Salt and Black Pepper - to taste Water or Vegetable Broth - 2 cups

Instructions:  Step 1  Sauté Onion & Garlic  Sauté onion and garlic in a little oil until translucent. Add spinach and cook until wilted.

Step 2 - Blend & Season  Blend with water or broth until smooth. Season with salt and black pepper.

Serve this soup hot as an evening snack. It will keep you warm as well as add nutrients to your diet.
