Ingredients:  For Filling: 1/4 Cup Cashew (Finely slivered) 1/4 Cup Almonds (Finely slivered) 1/4 Cup Pistachios (Finely slivered) 1/2 Cup Dates (Chopped) Stevia (Few Drops, as needed) 1 Tsp Cardamom Powder 1/2 Tsp Jaiphal Powder (Nutmeg) Pinch of Kesar/Saffron

For Dough: 2 Cups Jowar Atta 1/2 Cup Cashew Butter 1/2 Tsp Cardamom Powder 1/2 Tsp Nutmeg Powder 2 Tbsp Cashew Cream Stevia (Few Drops) Hot Water (to make the dough)

Method:  Roast cashews, almonds, pistachios, and saffron until lightly golden. Cool and add dates, stevia, cardamom, and nutmeg powder for the filling.

Mix all dough ingredients, make a soft dough with hot water. Form small rounds, fill with the prepared filling, seal, and create flowery edges. Bake in the oven at 180° – 200° C until golden on both sides.

Health Features:  Baked, not fried, eliminating the use of ghee. Jowar flour instead of maida or suji, reducing grain content. Stevia and dates used instead of sugar for diabetes-friendly sweetness.

Cooking Tip:  Roast nuts until a light golden color and the aroma of roasted nuts is evident.

Presentation: Makes between 25-30 medium-sized karanjis. Create attractive flowery edges for an appealing presentation.
