Winter Special Brinjal & Mushroom Stir-Fry

Diabetes-Friendly Brinjal Mushroom Stir-Fry. A tasty, low-carb stir-fry with brinjal and mushrooms.

Ingredients: Eggplant - ½ cup, diced Mushrooms - ¼ cup, sliced Garlic - 1 clove, minced

Ginger - 1/2 tsp, minced Soy Sauce - 1 tsp Salt - To taste

Instructions: Step 1 - Sauté Garlic & Veggies   Sauté garlic, then add eggplant and mushrooms.

Step 2 - Add Soy Sauce & Serve   Add soy sauce, cook until tender, and serve hot.

Combine this dish with a couple of multigrain chapatis to make it a perfect mela for lunch or dinner.
