Ulli Vada, also known as Onion Fritters, is a popular South Indian snack made from sliced onions coated in a spiced chickpea flour (besan) batter and deep-fried until crispy. These fritters are golden brown, crunchy, and packed with flavour, making them a favourite tea-time snack or appetizer.

Ulli Vada is a delicious South Indian snack made from sliced onions dipped in a spiced chickpea flour (besan) batter and deep-fried to crispy perfection. Besan contains soluble fiber, which helps maintain heart health by keeping cholesterol levels in check and promoting healthy blood circulation. The combination of besan and onions in Ulli Vada not only provides a delightful crunch but also offers nutritional benefits. These fritters are easy to make and perfect for enjoying with a hot cup of tea or as an appetizer for any meal.

Ingredients

  • 2 Onions
  • 46 59%
  • 1-1.5 Cup Gram Flour/ Besan (1.5 Cup or as needed)
  • 3 Green Chillies (Sliced) /1 Tsp Red
  • Chilli Powder
  • Handful Curry Leaves/Kadi patta
  • 1 Tsp Cumin Seeds/ Jeera
  • Pinch of Asafoetida/ Hing
  • Salt as needed
  • Oil

Method of Preparation

Step – 1

Heat the appe vessel/pan and brush it with oil. Add 1 drop of oil in each cavity. Make thin slices of the onions and sprinkle some salt on them. Add the chopped curry leaves, cumin seeds, and cashews. Add asafoetida, chilli powder (or green chillies), and gram flour to this.

Step – 2

Add 1 or 2 tbsp of the hot oil along with this and mix everything together. The salt draws out the moisture from the onions. If needed, just sprinkle a few drops of water and make a dough. Pinch a small portion of the dough and drop it in each cavity of the appe paatra. Cover and let it turn crispy on one side.

Step – 3

Remove the cover and turn it over. Add one drop of oil again to each cavity and let it become crispy.
