Airy & Tender Idlis That Are Easy On The Stomach and Blood Sugar

Idlis (Millet Steamed Pancakes) are a traditional South Indian delicacy made from a fermented batter consisting primarily of split black gram (urad dal) and millet, such as foxtail millet or finger millet (ragi). As a staple breakfast item in South India, idlis are not only delicious but also highly nutritious. Millets are rich in fiber, protein, and essential nutrients, while the fermentation process increases the bioavailability of nutrients and promotes gut health. Idlis are also naturally gluten-free and low in fat, making them a wholesome and versatile dish suitable for people of all ages and dietary preferences.

Idlis are a beloved South Indian delicacy known for their fluffy texture and mild flavor. This traditional dish is made from a fermented batter consisting of split black gram and millet, providing a nutritious and wholesome breakfast option. 

Fermentation is a key step in the preparation process, enhancing the flavor and promoting the growth of beneficial bacteria, which aids in digestion. The batter is steamed to perfection in specially designed molds, resulting in soft and airy idlis that are easy to digest and gentle on the stomach.

Ingredients

  • Split black gram
  • Millet
  • Salt
  • Batter
  • Curry leaves
  • Quinoa

Method of Preparation

Step 1:

Separately soak 1 cup of split black gram and 3 cups of millet in water. Allow them to soak for 8 hours or overnight.

Step 2:

Drain the soaked black gram and millet. Grind them together in a grinder or blender to a coarse paste, adding water gradually as needed.

Step 3: 

Transfer the ground mixture to a large bowl. Add 1 teaspoon of salt and mix well. Cover the bowl with a clean cloth and let it stand at room temperature overnight or for at least 8 hours to ferment.

Step 4:

After fermentation, stir the batter gently to incorporate any air bubbles.

Step 5: 

Grease the idli molds with a little oil. Pour the batter into each mold.

Step 6: 

Place the filled idli molds in a steamer and steam for about 10-12 minutes or until the idlis are cooked through.

Step 7:

To check if they are done, insert a toothpick into the center of an idli – if it comes out clean, they are ready.

Step 8: 

Once cooked, remove the idli molds from the steamer and allow them to cool for a few minutes. Use a spoon or knife to carefully remove the idlis from the molds. Serve the hot idlis with your favorite accompaniments, such as coconut chutney, sambar, or spicy tomato chutney. Enjoy your homemade idlis!
