Diabetes-Friendly Palak Moong Dal

Palak Moong Dal for Diabetics  Palak Moong Dal combines greens and proteins in a low calorie dish with fiber and iron-great for diabetic meals.

Ingredients:  Moong Dal (Yellow Split Lentils) - ½ cup Spinach (Palak) - 1 cup, chopped Ginger - 1 inch, grated Garlic - 2 cloves, minced

Cumin Seeds - ½ tsp Salt - to taste Water - 2-3 cups

Instructions:  Step 1  Cook Dal  Boil moong dal in water with salt until soft. Sauté cumin, ginger, and garlic in a separate pan.

Step 2 - Add Spinach & Mix  Add chopped spinach to the pan, cook until wilted, then mix with the dal. Cook for another 5 minutes.

Include this nutritious recipe in your meals, along with roti/rice and salad, to make it a complete meal.
