Winter Special Diabetes Friendly Bajra Khichdi

Bajra Khichdi (Pearl Millet Porridge  Packed with fiber, protein, and essential minerals, Bajra Khichdi is a traditional winter dish. It’s a hearty, wholesome meal that helps manage blood sugar and keeps you satisfied longer.

Ingredients: Bajra (Pearl Millet) - ½ cup, soaked Moong Dal (Split Green Gram) - ¼ cup, soaked Chopped Vegetables - 1 cup (carrots, beans, spinach) Ginger - 1-inch piece, grated Garlic - 2-3 cloves, minced

Cumin Seeds - ½ tsp Turmeric Powder - ¼ tsp Salt - to taste Water - 2-3 cups

Instructions:  Step 1  Soak & Prepare Ingredients Soak bajra and moong dal for at least 30 minutes to soften. Meanwhile, chop nutritious winter veggies like carrots, green beans, and spinach to boost the meal's fiber and vitamin content.

Step 2 - Cooking the Khichdi In a pressure cooker, sauté cumin seeds, ginger, and garlic in a small amount of ghee. Add the soaked bajra, moong dal, and veggies, then add water and cook for 4-5 whistles until soft and mushy.

Flavoring & Serving Add a pinch of turmeric, black pepper, and salt to taste for a balanced flavor. Serve your khichdi hot with a side of low-fat curd or a fresh, crunchy salad to complement the meal.
