Diabetes-Friendly Vegan Carrot Cake Recipe for Diwali

Ingredients: Gather wheat flour, baking powder, baking soda, salt, water, dates, raisins, allspice powder, shredded carrots, chopped walnuts, and carrot juice.

Preheat Oven: Preheat to 375F/190C and prep a cake pan with parchment paper.

Mix Dry Ingredients: Sift wheat flour, baking soda, baking powder, and salt.

Simmer Date Mixture: In a saucepan, simmer water, dates, raisins, and allspice powder for 5 minutes.

Combine Wet Ingredients: Pour the hot mixture over shredded carrots. Let it cool, then add walnuts and carrot juice; mix.

Blend Wet and Dry Ingredients: Stir dry ingredients into the wet mixture.

Bake and Serve: Bake the cake and enjoy. Store at room temperature and consume within 1-2 days.

Diabetics, have 1-2 small pieces based on sugar levels.
