Healthy Navratri Special:  Kuttu (Buckwheat) Dosa for Diabetics

Ingredients: Gather 1 cup kuttu (buckwheat) flour, 1 small boiled and mashed potato.

1 finely chopped green chili, chopped coriander leaves, rock salt (sendha namak) to taste, water, and ghee for cooking.

Prepare the Batter: In a bowl, mix kuttu flour, mashed potato, chopped green chili, coriander leaves, and rock salt.

Add Water: Gradually add enough water to the mixture to create a thin batter.

Heat the Pan: Preheat a non-stick pan and brush it lightly with ghee.

Cook the Dosa: Pour a ladleful of batter onto the pan, spreading it thinly like a dosa.

Flip and Cook: Cook until golden brown on one side, then flip and cook the other side until golden as well.

Serve: Repeat the process for more dosas and serve hot with a side of coconut chutney. Enjoy your nutritious Kuttu Dosa!
