Diabetes Friendly Patishapta Recipe

Ingredients:   Crepe Batter: 2 Cups Emmer/Khapli Flour, 2 Tbsp Emmer/Khapli Semolina, 1 Chopped Date, 1 Cup Water, ½ Cup Coconut Milk (as needed)

Filling:  1.5 Cups Grated Coconut, 2 Chopped Dates, Stevia Drops, 1 Tbsp Coconut Oil

Preparation:   Make syrup with water and dates. Mix with flour and semolina, add coconut milk. Rest for 30 mins. Cook coconut, dates, and stevia for filling until thick.

Cooking:   Heat pan with coconut oil, spread batter, cook, flip, add filling, roll into pancakes.

Serving:   Serve hot or cold.

Storage:   Consume 1 piece daily, especially if blood sugars are well-controlled
